Margot 2011

Margot is the result of a meeting in 2007 of a viticultor and a great chef, Gérald Passédat of Le Petit Nice (3 Michelin stars) in Marseilles, who shared a desire to create a unique dessert wine which would reflect the flavours and aromas of Provence.

The result is an exquisite wine, difficult to categorise, accompanying perfectly both fruit and chocolate desserts and also foie gras. Margot is above all a wine of pleasure! Made with the grenache grape, its sugar level classes it with the sweet white wines. But it is more than that, thanks to its singular method of preparation, a speciality of la Brillane. As for its taste, Margot is an earthy wine. Its tannicity means it can be drunk young but also allowed to mature for several years. It is full-bodied, with subtle flavours of crystalised grapes, orange peel and candied figs.

Appellation : Vin de Table

Age of the vines : 45 years old

Soil : clay-chalk

Grape varieties : Old Grenache

Wine-making process : organic production certified by the Ecocert label (French Organic label)

Harvest : Exclusively by hand. The grapes are selected at the foot of the vines, then transported to the wine-making hall in special trays.

Wine processing : Dried for two months to amplify the sugar and acidity, then tread on foot in the traditional manner. Pressing effected after the start of fermentation,

then transfer to stainless steel vats. Winter storage outside the hall to improve the filtering process.

Maturation : 8 months in stainless steel vats

Quantities produced : 1 500 bottles

Sugar level: 160 g/litre

Tasting notes

Colour : Margot 2011 is of a deep, deep red.

Smell : It has an intense aroma, reminding us of fruit liqueurs, cocoa and mocha.

Taste : Its taste is subtle and fresh, recalling jellied blackcurrent and blackberries, then with a lingering taste of spices, dried fruits and orange peel.

To be served between 3° and 5° C. (37° - 40° F.)

Accompaniment

Marries wonderfully with foie gras or sophisticated desserts.
