The "B" : spring wine 2009

Average age of the vines: 25 years old
Soil: clay-chalk
Grape varieties: Grenache, Syrah, Cabernet Sauvignon et Cinsaut - Wine-making process: organic production certified by the Ecocert label (French organic label)
Harvest: Exclusively by hand. The grapes are selected at the foot of the vines, then transported to the wine-making hall in special trays. - Wine processing: Selection of the desired grape variety in the correct proportions is completed in the wine-making hall. Separation of the vine stalks from the grapes; then the grapes slide down into cement tanks. Fermentation is realized with natural yeasts from the grapes themselves. Traditional fermentation methods are effected in the cement tanks. Temperatures are kept constant, the juice is collected naturally by gravity, and the free-run wine is separated from the pressed wine. Minimal quantities of SO2 are used.
- Maturation: 8 months in concrete tanks
- Quantities produced: 20.000 bottles
Bottled at the Domaine, with minimum filtration. - Yields: 50HL / Hectare (5.5 UK gallons/ 6.6 US gallons per acre)
- SO2: 48mg/litre (cf maximum authorised for red wine is 160 mg/litre, or 80 mg/litre in organic cultures)

Tasting notes :
- Colour: light, clear and bright robe, garnet colour with a purple hue.
- Smell: an intense odour of cherries and raspberries with a subtle touch of rosemary and bay.
Taste: smooth light taste with little tannin. A fruity flavour of cherry and raspberry with a definite spicy undertone.
To be served between 10° and 12° C. (48° - 51° F.) - Accompanying dishes: Light specialities of Provence, such as stuffed appetisers,
tomato or onion tarts. - Available in bottles (75ml) or magnums (150ml)
